Tantanmen Ramen – Spicy soul food with a creamy sesame note

Tantanmen is the Japanese interpretation of the famous Dan Dan Noodles. The combination of spicy sesame-chili broth, aromatic minced meat, and fresh toppings makes this ramen dish the perfect comfort food – especially on cool days. Tantanmen Ramen – Würziges Soulfood mit cremiger Sesamnote

The recipe

ingredients

2 servings of Ramenstar noodles with miso soup
200 g minced pork or beef
1 tbsp sesame oil
1 clove garlic, finely chopped
1 piece ginger (approx. 2 cm), finely chopped
1 tsp chili paste, doubanjiang, or optional miso paste
1 tbsp tahini (sesame paste) or unsweetened peanut butter
1 spring onion, sliced into rings
Chili oil (Ra Yu) to taste
Optional: Bok choy or spinach, ramen egg (Ajitama), sesame seeds

preparation

Prepare toppings:
Slice spring onion into fine rings. Optionally, wash and briefly blanch bok choy or spinach. Halve the ramen egg.

Brown the ground meat
Heat sesame oil in a pan. Briefly sauté garlic and ginger. Add ground meat and cook until crumbly. Stir in chili paste, doubanjiang, or miso paste to season the ground meat. Continue to fry briefly. Set aside.

Broth and Noodles:
Bring Ramenstar broth (960 ml water & broth) to a boil, stir in tahini (or peanut butter) until the broth is slightly creamy, then cook with the noodles for 2 minutes, stirring briefly.

Serve:
Divide noodles and broth into two bowls, top with the prepared ground meat. Garnish with spring onions, vegetables, and sesame seeds. If desired, add a soft ramen egg.

Tips from Ramenstar

For a milder version, use less chili oil and more sesame paste, or substitute part of the water with soy milk. For more spiciness, stir in additional fresh chili or Doubanjiang.

Vegetarian: Simply replace the minced meat with tofu crumbles.
