Shio (salt) ramen
Shio ramen is the lightest and most subtle of all ramen soups. The broth is based on a clear, slightly salty seasoning , often made with high-quality sea salt and chicken or fish broth. The flavor is fresh and delicate , allowing the natural flavors of the ingredients, such as vegetables, fish, or tender poultry, to shine through. Shio ramen is perfect for lovers of light, refreshing flavor profiles . Typical toppings include spring onions, nori, bamboo shoots, and sometimes toasted sesame oil for a touch of depth.

Miso Ramen (soybean paste)
Miso ramen boasts a savory, umami-rich flavor . The broth is made from fermented soybean paste and is often combined with chicken, pork, or vegetable broth. It has a thicker consistency and a warm, slightly nutty flavor . Toppings such as corn, butter, pork belly (chashu), wakame, and soft-boiled egg enhance its hearty character. Miso ramen is especially delicious during the colder months.
Shoyu (soy sauce) ramen
Shoyu ramen is characterized by its clear broth with a spicy, slightly sweet note , created by high-quality soy sauce. The broth is usually cooked with a chicken, fish, or pork base, offering a balanced flavor profile that is neither too heavy nor too light. The taste is deep and aromatic , with a hint of umami . Popular toppings include bamboo shoots, narutomaki (fish cake), spring onions, nori, and sometimes a soft-boiled egg. Shoyu ramen is versatile and the classic among ramen varieties.
