Tantanmen Recipe – Easy to prepare with the Ramenstar Kit
What is Tantanmen?
Tantanmen (担々麺) is the Japanese version of Chinese dan dan noodles. It typically features a spicy sesame broth, a hint of chili spice, and a topping of aromatic fried minced meat. Tantanmen is one of the most popular ramen dishes in Japan – especially on chilly days, it warms you from the inside and brings true soul food to your bowl.
With the Ramenstar Kit, you can easily recreate tantanmen at home. Our kit contains high-quality ramen noodles and a flavorful broth base (miso). All you need to add are a few fresh ingredients, and you've got an authentic ramen experience.

-
200 g minced pork or beef
-
1 tbsp sesame oil
-
1 garlic clove, finely chopped
-
1 piece of ginger (approx. 2 cm), finely chopped
-
1 tsp chili paste or Doubanjiang or optional miso paste
-
1 tbsp tahini (sesame paste) or unsweetened peanut butter
-
1 spring onion, cut into rings
-
Chili oil (Ra yu) to taste
-
Optional: bok choy or spinach, ramen egg (ajitama) , sesame seeds
Preparation step by step
1. Minced meat topping
Heat sesame oil in a pan. Briefly fry the garlic and ginger, add the minced meat, and fry until crumbly. Season with chili paste. Set aside.
2. Spicy broth
Prepare the broth from the Ramenstar kit in a pot with water (here, about 7 dl). Then stir in tahini until it reaches an aromatic, slightly creamy consistency. Finish with chili oil.
3. Cook pasta
Cook the ramen noodles (2 for the recipe) from the kit in plenty of water for 2-3 minutes (according to the package instructions). Drain and place in two large bowls.
4. Serving
Pour the hot broth over the noodles, scatter the minced meat over the top, and garnish with spring onions, vegetables, and sesame seeds. If you like, add a soft-boiled ramen egg .
Tips for perfect tantanmen
-
For a milder flavor, use less chili oil and more sesame paste or tahini. Or replace 2 dl of water with soy milk.
-
For more spice, stir in fresh chili or Doubanjiang.
-
Vegetarian version: Replace minced meat with tofu crumble.
